Grilled Caesar Beef Appetizer Kabobs

  Ingredients 1 pound beef boneless sirloin steak, 3/4 to 1 inch thick, cut into 1-inch pieces 1 medium yellow or green bell pepper, cut into 1-inch pieces 1 cup 1-inch pieces pattypan or yellow summer squash 1 1/2 cups whole mushrooms 1 1/2 cups cherry tomatoes 1/2 cup Caesar dressing 1/4 teaspoon coarsely ground pepper 30 wooden skewers (6 to 8 inches) Romaine leaves Additional Caesar dressing, if desired Chopped fresh chives, if desired Steps 1  In large resealablefood-storage plastic bag, place beef, bell pepper, squash, mushrooms and tomatoes. Mix 1/2 cup dressing and the ground pepper. Pour over beef and vegetables; seal bag and turn to coat. Refrigerate at least 1 hour but no longer than 4 hours, turning bag occasionally. Soak skewers in water about 1 hour to prevent burning. 2  Heat coals or gas grill for direct heat. Remove beef and vegetables from marinade; discard marinade. Remove skewers from water. Grilled Teriyaki Beef Kabobs

  Ingredients 1 1/2 pounds beef boneless top sirloin steak, cut into 1-inch cubes 1 cup teriyaki baste and glaze 1 medium bell pepper, cut into 1-inch pieces 18 medium whole fresh mushrooms 2 tablespoons vegetable oil 1/4 cup sesame seed, toasted Steps 1  Place beef in shallow glass or plastic dish or heavy-duty resealable plastic bag. Pour teriyaki baste and glaze over beef. Cover dish or seal bag and refrigerate, stirring beef occasionally, at least 4 hours but no longer than 24 hours. 2  Heat coals or gas grill for direct heat. Remove beef from marinade; discard marinade. Thread beef, bell pepper and mushrooms alternately on each of six 15-inch metal skewers, leaving space between each piece. Brush bell pepper and mushrooms with oil. Sprinkle kabobs with sesame seed. 3  Cover and grill kabobs 4 to 6 inches from medium heat 15 to 20 minutes, turning frequently, until beef is no longer pink in center.  

Grilled Surf and Turf Kabobs

  Ingredients 3/4 lb boneless beef sirloin steak (3/4 inch thick), trimmed of fat 12 uncooked deveined peeled medium or large shrimp, thawed if frozen, tail shells removed 1/2 cup teriyaki marinade and sauce (from 10-oz bottle) 1/4 teaspoon coarsely ground pepper 12 bamboo skewers (4 to 6 inch) Steps 1  Cut beef into 24 (3/4-inch) pieces. In medium bowl, mix beef, shrimp and teriyaki sauce. Sprinkle with pepper. Cover; refrigerate 30 minutes, stirring frequently. Meanwhile, soak skewers in water at least 30 minutes before using to prevent burning. 2  Spray grill rack with cooking spray. Heat gas or charcoal grill. On each skewer, thread 1 beef piece, 1 shrimp and another beef piece, leaving space between each piece; reserve marinade. 3  Place kabobs on grill. Cover grill; cook over medium heat 5 to 6 minutes, turning once and brushing with marinade once or twice, until shrimp are pink. Discard any remaining marinade.

Italian Beef Kabobs (Cooking for 2)

  Ingredients 1 beef bone-in sirloin or round steak, 3/4 pound, 1 inch thick 2 garlic cloves, finely chopped 1/4 cup balsamic vinegar 1/4 cup water 1 tablespoon chopped fresh oregano leaves or 1 teaspoon dried oregano leaves 2 tablespoons olive or vegetable oil 1 1/2 teaspoons chopped fresh marjoram leaves or 1/2 teaspoon dried marjoram leaves 1 teaspoon sugar Steps 1  Remove fat from beef. Cut beef into 1-inch pieces. 2  Mix remaining ingredients in medium glass or plastic bowl. Stir in beef until coated. Cover and refrigerate, stirring occasionally, at least 1 hour but no longer than 12 hours. 3  Set oven control to broil. Remove beef from marinade; reserve marinade. Thread beef on each of four 10-inch metal skewers, leaving 1/2-inch space between each piece. Brush kabobs with marinade. 4  Place kabobs on rack in broiler pan.
